Street Corn Salsa

A unique take on mexican street corn shucked from the cub and tossed as a salsa.

Ingredients
  

  • 1 15 oz can corn preferably sweet
  • 1 tbsp butter
  • 1/3 cup red onion diced
  • 2 jalapenos diced
  • 3 cloves garlic diced
  • 1/3 cup cilantro chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1 dash salt optional
  • 1 tbsp lime juice
  • 1/2 avocado creamed/whipped
  • crumbled cotija cheese use as desired

Instructions
 

  • Melt butter over medium heat and saute corn.
  • After 5 minutes of cooking add garlic, cumin, chili powder, oregano, and salt to the corn. Continue cooking 5 minutes, for a total of 10 minutes. Stir occasionally.
  • In a medium-sized bowl toss corn mixture, red onions, jalapenos, cilantro, and lime juice. Mix in avocado until cover with cotija cheese.
