Cut the tortillas into various triangle shapes. Place in a gallon baggie and pour in melted butter. Shake vigorously to ensure each triangle gets coated. If pieces get stuck together, separate and continue shaking.
Mix the cinnamon and sugar in a small bowl. Pour into the baggie and shake until dispersed.
Bake at 350 degrees F for 8 minutes. Flip and continue cooking for 4 min. Let cool on a wire rack. Chips will get more crispy as they cool.
Once cool, top with strawberries and melted chocolate. Add whipped cream as desired and garnish with fresh mint leaves.
