Thin Mint Chocolate Truffles transform the beloved Girl Scout cookie with melted chocolate and cream cheese into an even tastier treat. Mint chocolate is the ultimate flavor combination of fresh mint and rich chocolate, and there’s a reason fans adore Thin Mint cookies! Imagine crisp Thin Mints with an added creaminess factor, and then you’ll have these decadent truffle balls. With only 3 main ingredients and so little prep, you cannot go wrong with this quick treat!

Cookies Galore

My love of cookies (and chocolate, and anything sweet) shouldn’t be a surprise to anyone who knows me. It doesn’t have to be Christmas time for me to indulge on homemade cookies. Chocolate chip cookies are the quintessential baked good, but creativity in the kitchen doesn’t have to stop there!

As a previous scout, Girl Scout Cookies hold a special place in my heart. Every February I can’t wait to get my hands on Samoas, Tagalongs, and of course, Thin Mints!

With St. Patrick’s Day right around the corner, what better time to experiment with Thin Mints and create some green-themed goodies. While they may not be a part of traditional Irish food, they’ve quickly become a staple in my house this time of year!

How to: Make Thin Mint Chocolate Truffles

The MVP for this recipe is by far the food processor! It makes this recipe so incredibly easy and I can’t imagine making truffles without it.

Start by chopping Thin Mint cookies in a food processor until they are really fine and crumbly.

Add in the cream cheese and pulse the food processor several times until the mixture is mostly combined. It’s okay if some cookies are still dry, it will combine more when shaping the balls.

Using a small ice cream scoop, portion out equal-sized balls. Roll the cookie mixture in your hands to form smooth, round-shaped balls.

Before decorating, the truffle balls need to cool for at least 30 minutes in the fridge or freezer.

How to: Decorate Chocolate Truffles

While the truffle cookies are cooling, it’s time to start on the chocolate!

Melt chocolate chips or chocolate melts until smooth. The microwave or double-boiler method works, but I prefer the ease of the microwave.

If using chocolate chips, to make the chocolate even smoother mix in a small amount of coconut oil at the end.

Gather fun green and white sprinkles to keep with the Thin Mints theme or for St. Patrick’s Day!

Once the truffle cookies are refrigerated, toss each cookie ball in the warm, melted chocolate using two forks to thoroughly coat. 

Place carefully on a cookie sheet lined with parchment paper and immediately top with sprinkles while still warm.

Refrigerate for another 30 minutes then enjoy!

  • 1/2 package Thin Mint Cookies
  • 2 oz cream cheese
  • 1/2 cup chocolate chips
  • 1 tsp coconut oil
  • sprinkles to decorate

Instructions

  9. Wow, not only do those thin mint truffles look amazing, but they sound super simple to make! The decorations are perfect, too. I’ve been experimenting with low-carb dessert recipes. I’ve made some chocolate truffles using low-care ingredients like almond flour, cocoa powder, almond butter, coconut butter, coconut oil, and stevia-sweetened chocolate chips. For sweeteners, I use monk fruit or stevia. It’s nice to enjoy a sweet treat without the sugar (at least for me).
