It’s February, and I’m having major cookie cravings. That’s right, it’s Girl Scout Cookies season! Samoas Caramel Popcorn is a new twist on a classic favorite. Buttery popcorn mixed with the coconutty, caramely, chocolatey goodness of samoas?? Yes please! Every Girl Scout cookie is delicious and I look forward to them all year round, but Samoas are by far #1 in my heart!

Unbeatable Girl Scout Cookies

There are 12 different Girl Scout Cookies this year, and honestly would try all of them if I could. From classics like Thin Mints or Trefoils, to new S’mores and Toast-Yays! there is a Girl Scout cookie for everyone. Check out Meet the Cookies to learn a little bit more about each sweet treat!

I was a Girl Scout growing up and always had the most fun seeing how many cookies I could sell, but looking back it was clearly my parents doing all the work.

Now I love being able to get my hands on these beloved cookies and happy support this organization that does so much for empowering girls across the US

As you know, I have a major sweet tooth and my first desserts recipe shared was cookies! Chocolate chip cookies to be exact.

Lately I’ve found myself craving a little bit of sweet AND salty and have enjoyed finding snacks to incorporate both. White chocolate chex mix and brown butter sweet potatoes are two great examples of combining these contrasting flavors into an incredible combination.

Preheat the oven to 250 degrees F. Prep a sheet pan with parchment paper.

Pop some popcorn in the microwave or on the stove, whichever method you normally do. Any popcorn works, and I find the butter really shine through when mixed with the caramel!

Pour the popcorn into a large bowl and set aside to prep the caramel.

Over medium low heat, slowly melt caramels in a small pan with a splash of water. Stir frequently with a wooden spoon. Once melted, pour over the popcorn and toss until covered.

It will be VERY sticky but push through! Lay flat on the baking sheet and bake for 20 minutes, stirring halfway through.

Once the popcorn has finished in the oven, let it cool for about 30 minutes.

While the popcorn is cooling the coconut and chocolate can be prepped!

Lightly toast coconut over medium-low heat. Melt the butter in a small pan and stir in the coconut. Stir often and be careful not to burn. Set aside.

Melt the chocolate chips in the microwave. Start with 30 seconds, stir, and continue microwaving for 15 second increments until melted, stirring each time.

Chop Samoas cookies into small pieces and set aside.

Once the chocolate is melted, drizzle over the cooled popcorn. Top with toasted coconut and Samoas pieces while the chocolate is still warm. Enjoy fresh!

  • 10-12 oz caramels

  • 1 tbsp butter
  • 1/2 cup shredded coconut
