The Beauty of Overnight Oats

Eating a nutritious breakfast on busy mornings can be a challenging feat. I’m always in the mood for big, savory breakfasts like ham and egg scramble with a side of crispy potatoes, or a brunch bowl filled with eggs and BBQ, but they’re not exactly the best before a long workday.

Meal prep has completely changed my morning routine and given me so much more time to relax and ease into my day without having to worry about breakfast. 

I’ve always been a fan of homemade oatmeal but was spending too much time everyday crafting my bowl with all my desired ingredients. Overnight oats allow me to prep breakfast for the workweek all at once and take back my mornings.

Prepping my oats on the weekends gives me more time for creativity in the kitchen and to create new flavor combos that are out of this world! They can be made as healthy as you’d like with all your favorite mix-ins – nuts, chia/flax seeds, nut butters, fresh fruit, nutritional powders, and more.

Easily my #1 go-to that I just cannot get enough of are these creamy PB & banana oats. They’re just so comforting and so filling! No midmorning snacks for this girl

How To: Make Overnight Oats

Overnight oats are so easy to make and can be completely customizable. You won’t need more than 15 minutes to prep your breakfast for the entire week! Now that’s efficiency

Gather all of your ingredients, a large bowl, and 4-5 glass containers or Mason jars.

In the large bowl, miix oats, milk, Greek yogurt, vanilla, cinnamon, and flax or chia seeds. Add in the peanut butter, mashed bananas, and chocolate chips if using and stir to combine.

Portion out oats into glass containers and store in the fridge.

When ready to eat overnight oats, microwave for 2 minutes and top with additional peanut butter if desired.

  • 3 cups old fashioned oats 
  • 2 cups milk
  • 1 cup greek yogurt  
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1.3 cup flax seeds or chia seeds
  • 1/2 cup peanut butter
  • 2 bananas mashed
  • 2 tbsp chocolate chips optional

Instructions
 

  • In the large bowl, miix oats, milk, Greek yogurt, vanilla, cinnamon, and flax or chia seeds. Add in the peanut butter, mashed bananas, and chocolate chips if using and stir to combine.
  • Portion out oat mixture into glass containers and store in the fridge.
  • When ready to eat, enjoy cold or microwave for 2 minutes. Top with additional peanut butter if desired.

Breakfast is my favourite meal of the and like you, I always crave big, exciting breakfasts but they’re not always practical and sometimes they just make me hungry all day.     Peanut butter and bananas are one of my favorite combos! I do make an oatmeal with them when the mood strikes…but I haven’t tried an overnight version and have not added chocolate chips either! (What is wrong with me?) This will make a great meal prep breakfast for me!
