Once the weather starts to turn cool, I love cooking a roast on Sunday evenings. Ending the weekend with a comforting meal that is prepared hands-free in the oven is an ideal way to spend my afternoon.
Roasts of any kind used to be intimidating to me and were reserved for special occasions. Now, I can’t get enough of this tenderloin or even a whole roasted chicken.
Learning about the roasting process and writing this info piece really helped my confidence and love grow, and I hope yours will too!

How to: Make Roasted Pork Tenderloin
Making a roast has never been easier!
Pork tenderloins are really lean cuts of meat and don’t take much time at all to cook up in the oven.
You can find several different varieties in the store, and lots come prepackaged in a marinade! I’ve never tasted one I didn’t like and most flavors won’t take away from the sweetness of the apple.
Start by slicing an apple and chopping up an onion. Reserve about 8 apple slices to place in the pork, and continue chopping the remaining apple into bite size pieces.
Toss the apple and onion into a cast iron skillet or baking dish and drizzle with olive oil. Sprinkle rosemary or thyme and salt and pepper, and toss until evenly distributed.
Using a paring knife or other sharp, short blade knife make roughly two-inch cuts down the tenderloin. These cuts should be just big enough to hold an apple slice.
Place an apple slice snugly in each cut and place the tenderloin into the skillet or baking dish.
(Pro tip: if desired, top with bacon bits!)
Place in the oven and cook at 425° for 20 minutes per pound, or following the instructions on the label. The internal temperature should reach 145° before serving.

Ingredients
- 1 pork tenderloin
- 1 Granny Smith apple thinly sliced
- 1 onion chopped
- 2 tbsp olive oil as needed
- 1 tbsp dried rosemary
- salt and pepper
Instructions
- Preheat oven to 425° Fahrenheit.
- Set aside 7-8 apple slices. Roughly chop the remaining apple and place in a cast iron skillet or baking dish with the onion. Pour in olive oil and add rosemary, salt and pepper. Toss until evenly distributed.
- Make small, 2-inch cuts down the length of the tenderloin. Tuck an apple slice in each of the cuts and set the tenderloin in the skillet or baking dish. Sprinkle with additional salt and pepper.
- Bake 20 minutes per pound or until the internal temperature reaches 145° Fahrenheit.
